Sweet Potato Turkey Bacon Chowder

Ingredients

  • 6 slices Wellshire Turkey Bacon
  • 2 tablespoons olive oil
  • 1 small yellow onion diced
  • 2 medium carrots diced
  • 2 medium celery stalks diced
  • 2 cloves garlic minced
  • 3 cups chicken broth
  • 5 cups sweet potatoes peeled and diced
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1 cup kale roughly chopped
  • 2/3 cup heavy whipping cream
  • salt and pepper

Directions

  1. Cook turkey bacon in a pan to desired crispness. Reserve any grease in the bottom of the pan.
  2. Add olive oil to bacon grease.
  3. Add onions, carrots, and celery to a large soup pot. Cook for about 4 minutes or until vegetables begin to soften. Add garlic and let cook for another minute or so.
  4. Add chicken broth, sweet potatoes, bay leaf, and thyme. Bring all to a boil and then cover. Bring the heat down to simmer. Leave for 12-15 minutes or until the potatoes have softened. Remove bay leaf if desired.
  5. Using an immersion blender, blend the soup until it has the consistency that you like. (A blender will also work if you don’t have an immersion blender. Blend, puree, and then put back into the pot.)
  6. Next add the kale or spinach and cook until the leaves are wilted. Add whipping cream, and salt and pepper to taste.
  7. Top with turkey bacon and dig in!
