Ingredients

  • 5 bell peppers, tops cut off and seeds removed
  • ½ onion, chopped
  • ½ tbsp olive oil
  • 1 tsp minced garlic
  • ½ lb ground turkey
  • ½ cup Wellshire Sugar Free Bacon, chopped
  • 1 tomato, chopped
  • ½ cup spinach
  • 7oz tomato sauce
  • 2 tbsp Italian seasoning
  • salt to taste
  • black pepper to taste
  • ½ cup rice, cooked

Directions

  1. Preheat oven to 350°F.
  2. Over medium heat, sauté onions in olive oil until onions are clear. Add garlic and mix together.
  3. Add ground turkey and bacon to the onions and cook. Cook until meat is browned.
  4. Add tomato and spinach and cook until spinach is wilted. Then add tomato sauce and combine.
  5. Add rice, Italian seasoning, salt, and black pepper. Stir until everything is mixed together.
  6. Spoon meat mixture into peppers. Bake for 35 minutes.
  7. Remove from the oven and serve!
