Ingredients

  • olive oil
  • 8 eggs
  • 4 slices of Wellshire bacon, cooked and cut into quarters
  • 8 asparagus spears (woody ends removed)
  • 1/2 cup spinach
  • 8 cherry tomatoes (halved)
  • salt and pepper

Directions

  1. Preheat the oven to 425 degrees F. Coat a baking sheet with oil and place in oven to heat for 15 minutes.
  2. Crack the eggs in a dish or pitcher. Remove the sheet pan from the oven and quickly pour the eggs onto the pan.
  3. Add bacon, asparagus, spinach and cherry tomatoes to the pan, spread evenly.
  4. Bake until the egg white are just set but yolks are still a bit runny, for about 5 minutes.
  5. Take out of the oven and let cool before eating.
