Ingredients

  • 1 tbsp olive oil
  • 12 oz Wellshire Turkey Kielbasa, sliced
  • 1 3/4 cups chopped carrots
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • 42 oz chicken broth
  • 1 cup water
  • 1 tbsp parsley
  • 1/2 tsp oregano
  • 4 oz spinach, chopped
  • 1 to 2 cans white beans, drained and rinsed (depending on how much you enjoy beans)
  • Salt and pepper, to taste

Directions

  1. Add olive oil to a large pot over medium heat.
  2. Add kielbasa and cook until slightly browned. Set aside to drain.
  3. Add carrots, onion, celery, and garlic and cook for about 5 minutes, stirring together.
  4. Add chicken broth, water, parsley, and oregano. Stir together. Season with salt and pepper.
  5. Bring to a boil over medium-high heat, boil for 10 minutes.
  6. Add spinach and boil for another 10 minutes or until vegetables are tender.
  7. Turn heat down to warm and add in cooked kielbasa and beans. Stir and warm for 5 minutes.
  8. Add more broth if needed to get desired consistency.
