Ingredients

  • 1 package Wellshire Classic Turkey Bacon
  • 1 cup all-purpose flour
  • 1 cup bread flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon granulated sugar
  • 2 oz Irish cheddar cheese cubed
  • 3/4 cup buttermilk

Directions

  1. Preheat oven to 400F.
  2. Line a baking pan with parchment or a silicone baking mat. Rub a little flour on the spot where you will be placing the dough.
  3. Cook turkey bacon according to your favorite method, chop, and set aside.
  4. Sift or whisk together all dry ingredients in a bowl.
  5. Add turkey bacon and cheese to flour mixture.  Resist the temptation to add more cheese than what the recipe calls for.
  6. Add buttermilk and mix well.
  7. Knead the dough with your hands for 1-2 minutes. The dough should be wet/sticky and hold together.
  8. Form the dough into a round shaped loaf and place it on the floured section of your baking pan.
  9. Score the dough fairly deeply in a cross shape on the top of the loaf.
  10. Bake for 22-25 minutes. You’ll know the bread is done when it’s lightly browned on top, and sounds hollow if you tap it on the bottom of the loaf.
