Ingredients

  • 1 package Wellshire Black Forest Bacon
  • 1/2 cup salted butter
  • 1/2 cup raw sugar
  • 1/4 cup packed light brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 2 cups all-purpose flour
  • 1/4 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup chocolate chips
  • 1/2 cup minced dates

Directions

  1. Preheat the oven to 350°F.
  2. Place bacon on a baking sheet and bake until fully cooked and at your desired crispiness.
  3. Microwave the butter for about 30 seconds until somewhat melted. Using a mixer, beat the butter with the sugars until creamy.
  4. Add the vanilla and then the egg. Beat on low speed until blended. Next, add the flour, cinnamon, baking soda, and salt. Mix until crumbles form.
  5. Mixing with your hands, press the crumbles together into a dough. Add the chocolate chips, dates and bacon. Mix well.
  6. Roll the dough into small or medium sized balls and place on a greased cookie sheet. Bake for 9-11 minutes until the cookies look puffy and golden brown on the edges.
