Ingredients

  • 1 lb potatoes cubed
  • 3 tbsp water
  • 1 package Wellshire Smoked Polska Kielbasa
  • 1/2 cup onion chopped
  • 1 tbsp olive oil
  • 2 tbsp brown sugar
  • 2 tbsp cider vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
  • 4 cups fresh baby spinach
  • 5 slices Wellshire Sliced Beef Bacon cooked

Directions

  1. Microwave potatoes and water on high for 4 minutes or until tender; drain.
  2. In a large skillet, cook kielbasa and onion in oil until onion is tender. Add potatoes. Cook for 3-5 more minutes.
  3. Mix the brown sugar, vinegar, mustard, thyme and black pepper together and stir into skillet. Bring to a boil.
  4. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through.
  5. Add spinach and pre-cooked bacon; cook and stir until spinach is wilted.
  6. Enjoy!
