Ingredients

  • 1/2 cup finely ground cornmeal
  • 1/4 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cups flour
  • 3/4 cups milk
  • 2 tbsp maple syrup
  • 2 tbsp melted butter
  • 3 large eggs separated
  • salt

Directions

  1. In a large bowl, combine all the dry ingredients (cornmeal, cinnamon, baking powder, baking soda, and flour).
  2. In a separate bowl mix milk, maple syrup, melted butter and egg yolks.
  3. Add wet ingredients to dry ingredients and mix until combined. Add extra milk tablespoon by tablespoon if the batter seems too thick.
  4. Add the egg whites and salt to a clean bowl and whip until soft peaks form. Carefully fold into the batter.
  5. Heat a well-greased griddle or frying pan over medium-high heat. Pour about ¼ cup of the batter onto the griddle or into the frying pan and sprinkle with blueberries, corn kernels and bacon.
  6. Cook for a few minutes or until you start seeing bubbles forming on the surface. Flip and continue cooking for another 1-2 minutes.
