1 1/2 lbs pumpkin and/or butternut squash (peeled, seeded, and cut into 2″ chunks)
Directions
Preheat oven to 350F. Place a wire rack in a rimmed baking sheet (line your baking sheet with foil to make clean up easier if desired).
In a mixing bowl, mix together ginger, cinnamon, rosemary, olive oil, and maple syrup. Add the pumpkin and/or butternut squash to the mixture, toss together until all of the pieces are covered.
Cut the bacon sliced in half.
Wrap each spiced pumpkin and/or butternut squash in a half slice of bacon. Place on the wire rack so that the ends of the bacon slice are on the bottom (this stops them from unraveling while cooking).
Using a spoon, drizzle any remaining spice mixture over the top of each bacon-wrapped piece of pumpkin and/or butternut squash.
Bake for 40 minutes. Remove from the oven and serve!
