Ingredients

  • 6 English muffins cubed
  • 3 tbsp butter
  • 2 packages Wellshire Maple Ham (chopped)
  • 4 green onions sliced
  • 1/2 cup sharp cheddar cheese shredded
  • 8 large eggs
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 2 tbsp yellow mustard
  • 1 1/2 tsp salt
  • 1 package hollandaise sauce

Directions

  1. Preheat oven to 375F.
  2. Toast and cube the english muffins.
  3. Butter a casserole dish, and spread the muffin cubes into the bottom of the dish. Set aside.
  4. Melt butter in a large, non-stick skillet. Sauté the ham and chopped green onions until the ham starts to brown, stirring occasionally.
  5. Put the ham and green onions in an even layer over the cubed english muffins.
  6. Top the ham with shredded cheese in an even layer.
  7. Mix together the eggs, milk, sour cream, mustard, and salt. Pour egg mixture over the other ingredients in the casserole dish.
  8. Cover the dish with foil.
  9. Bake the casserole for 30 minutes, covered.
  10. Remove the foil, and continue baking for another 15 minutes.
  11. While the casserole is in the oven, make the hollandaise sauce according to package directions (or use your favorite recipe).
  12. When the casserole is out of the oven, top with hollandaise sauce. Serve warm and enjoy!
