Preheat waffle maker to medium-high heat and oven to 200°F.

In large bowl, whisk together egg yolks, buttermilk and butter.

In separate bowl, stir together flour, baking powder, baking soda, salt and sugar. Whisk flour mixture into buttermilk mixture.

In a small bowl, whisk egg whites until soft peaks form.

Using rubber spatula, fold egg whites, parsley, sage and rosemary into buttermilk mixture until just combined.

Cook small batches of waffles until golden brown. Keep warm in the oven on a baking sheet.

Top waffles with ham slices and sprinkle with cheese on baking sheet. Cook until the cheese is fully melted and serve immediately.
