Ingredients

  • 3/4 cup uncooked quinoa
  • 2 eggs
  • 2 egg whites
  • 1 zucchini shredded
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup Wellshire Black Forest Ham diced
  • 1/4 cup fresh parsley chopped
  • 3 Tbsp parmesan cheese grated
  • salt & pepper to taste

Directions

  • Preheat oven to 350
  • Spray mini muffin pan with cooking spray, set aside
  • Shred zucchini into a large bowl, set aside.
  • Rinse and cook quinoa according to package directions. Will expand to at least 2 cups’ worth of cooked quinoa. Add to zucchini.
  • Mix cheese, eggs, egg whites, ham, parsley, salt & pepper into bowl with zucchini and quinoa. Combine thoroughly.
  • Spoon mixture into each cup of the muffin tin. Fill to the top.
  • Bake until the edges of each bite are golden brown, about 15 minutes.
  • Let cool for at least 5 minutes before removing from the muffin tin. Enjoy warm!
