Ingredients

Candied bacon

Cookie Dough

  • 2 1/4 cup all-purpose flour
  • 2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon ground
  • 3/4 cup unsalted butter room temperature
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg room temperature
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup miniature chocolate chips

Cinnamon Sugar Coating

  • 1/4 cup maple sugar
  • 2 tbsp sugar
  • 2 tsp cinnamon

Directions

Candy the bacon

  1. Preheat oven to 350F.
  2. Cover a baking sheet with aluminum foil, and a wire rack.
  3. Place bacon on wire rack. Pour maple syrup over bacon, then sprinkle brown sugar on top.
  4. Back for 20-15 minutes, until crispy. Let cool completely on the wire rack.
  5. Once, cool, chop into very small pieces and set aside.

Make the cookie dough

  1. Cream together the butter and sugars.
  2. Add egg, maple syrup, and vanilla to creamed butter mixture. Beat to fully combine.
  3. Whisk together flour, baking soda, baking powder, and cinnamon in a medium bowl.
  4. Slowly add dry ingredients to wet, and mix on medium speed until combined.
  5. Add chopped candied bacon and mini chips, stir to combine.
  6. Chill dough in refrigerator for at least 1 hour.
  7. Preheat oven to 375F. Place parchment paper on baking sheets.

Make the sugar coating

  1. Whisk together maple sugar, granulated sugar, and cinnamon.

Bake the cookies

  1. Use a cookie scoop to measure out dough.
  2. Drop each ball scooped into the sugar coating mixture, and roll each cookie in the sugar. Move to the prepared baking sheet.
  3. Place each cookie about 2 inches apart on the baking sheet.
  4. Bake for 8-10 minutes, until the tops have started to crack.
  5. Cool completely before eating.
