Ingredients
4 sweet potatoes
Gruyere cheese
cheddar cheese, shredded
Wellshire pork bacon
sour cream, optional
Directions
Preheat oven to 400°F. Using a fork, poke holes into the sweet potatoes skin, at least 4 times in different places. Wrap sweet potatoes in foil and place in the oven. Bake for an hour.
While potatoes are baking, cook bacon in a frying pan. Once browned to your preference, remove and cool on paper towel. Once cooled, chop into small pieces.
Once baked, unwrap potatoes and place on a serving dish. Cut each potato in half.
Add shredded Gruyere and cheddar cheese to potatoes while hot so the cheese will start to melt. Finally add chopped bacon. Serve with sour cream if desired.
