Ingredients
4 slices Wellshire Black Forest Bacon
1 onion, chopped
olive oil
2 sweet potatoes
salt, to taste
pepper, to taste
3 eggs
scallions, thinly sliced
Directions
Preheat oven to 400°F.
Heat a large skillet over medium heat. Chop bacon and add to skillet. Next add onion and cook until translucent.
In a separate skillet, add oil and sweet potatoes. Stir together with salt and pepper. Cook covered until the potatoes start softening and brown on the outside.
Add cooked potatoes to the skillet with bacon and onion. Mix together.
Create 3 pockets where you want the eggs to go. This will keep the eggs contained and prevent them from spreading. Carefully crack the eggs into these pockets.
