Preheat oven to 425°F. Whisk together eggs, milk, salt, and pepper in a large bowl. Then add in cheddar cheese and mix together.

Chop and cook bacon per package instructions in a large skillet. Add onions, spinach, and red peppers and stir in with bacon. Cook until the onions are clear and spinach has wilted.

Add cubed bread slowly, folding into skillet until all the bread is covered. Cook until the coated bread toasts, turning brown on the edges. Mix if needed to toast all the bread.

Remove from the heat and add egg mixture. Mix with toasted bread, pressing down on the bread to make sure the liquid soaks in properly.

Bake in the oven, for about 15 minutes, or until the strata is fluffy and the edges are browned.
