Ingredients
1 package Wellshire Thick Sliced Bacon
1/2 white onion, chopped
1 tsp salt
1 tsp black pepper
5 cups broccoli, chopped
1 carrot, shredded
2 cups whole milk
1 tsp Dijon mustard
2 cups shredded sharp cheddar cheese
1 tbsp corn starch
2 cups chicken broth
Directions
Chop bacon into lardons.
In a large pon on medium heat, cook bacon until crispy. Remove bacon to a paper towel to drain. Reserve bacon fat.
Add chopped onion to bacon fat, and season with salt and pepper. Cook for 5 minutes until soft and browned. Add broccoli, shredded carrot and milk. Let sit for 7-10 minutes or until broccoli is soft.
Remove half of the soup and place in a large bowl. With an immersion blender, blend half of the soup until creamy, then pour back into the pot.
Stir in mustard, cheese, corn starch (for thickening), and chicken broth. Blend once more with the blender and then simmer on low for 25 minutes. Top with more shredded cheese and any remaining bacon. Enjoy!
